The wine is bottled in April and<br \/>\nthen bottle-aged for about 9 months.<\/p>\n<p><strong>WHEN<\/strong><br \/>\nMouth-wateringly crisp:<br \/>\nit won\u2019t stay long in the cellar,<br \/>\nnor in your glass.<\/p>\n<p><strong>CLASSIC PAIRING<\/strong><br \/>\nPerfect with onion soup and medium-aged cheeses\u2013we suggest<br \/>\nOssolano, Taleggio or Bettelmatt.<br \/>\nAn impeccable union with tongue in sauce.<\/p>\n<p><strong>VINES AND SOIL<\/strong><br \/>\n2 hectares: vines of approximately 30 years of age on<br \/>\nLequio formations (grey marl alternating with sand layers)<\/p>\n<p><strong>HARVEST<\/strong><br \/>\nHand-picked in the first ten days of October<\/p>\n<p><strong>PRESENTATION<\/strong><br \/>\nAvailable format: 0.75 l<br \/>\nAlcohol content 12.5%-14% by volume depending on the vintage<br \/>\nDense shades of ruby-red with crimson highlights.<br \/>\nFruit notes when young; blackberry and jam notes develop<br \/>\nas the wine peaks. Full-bodied, with a tart edge accentuating its<br \/>\nfragrance and freshness.<\/p>\n<p><strong>HOW<\/strong><br \/>\nStore in dark, dry place, at a constant temperature below 20\u00b0 C.<br \/>\nServe at 16\u00b0-18\u00b0 C; swirl and oxygenate the wine in a large glass<br \/>\nto concentrate the nose.<\/p>\n<p><strong>UNUSUAL PAIRING<\/strong><br \/>\nA succulent creamed salt cod?
