\nCelebrated autochthonous Piedmontese red variety<\/p>\n

VINIFICATION<\/strong>
\nThe entire grape clusters remain in the press for several hours of
\ncryomaceration. The grapes are soft-pressed to extract only the
\nfree-run must. Fermentation takes place in stainless steel tanks at
\nbetween 15-16\u00b0 C. We use the Martinotti method-also called
\nthe Charmat method (about 6 months on lees).
\nDudes is bottled at the end of summer.<\/p>\n

CLASSIC PAIRING<\/strong>
\nServe with a rich and tasty fish soup.
\nIt brings out the best in simple antipasti and is perfect with bread
\nand butter and salmon or mackerel.
\nTry it with pizza or with focaccia with lard or salami.<\/p>\n

\n0.6 hectares: vines are 15 years of age on average on
\nSant\u2019Agata marl (marl layers with silt and clay content)<\/p>\n

HARVEST<\/strong>
\nHand-picked between late September and early October<\/p>\n

PRESENTATION<\/strong>
\nAvailable format: 0.75 l
\nAlcohol content 12%-13% by volume depending on the vintage
\nHeady aroma of fresh fruit with cherry, strawberry
\nand raspberry notes. Floral with including the fragrance of rose.
\nDelicate and lingering bead. Fragrant and delicate flavour, yet
\ndecisive with lightly tannic finish.<\/p>\n

HOW<\/strong>
\nStore upright in a dark, dry place at constant temperature,
\nbelow 20\u00b0 C.
\nServe at 6\u00b0-8\u00b0 C in a narrow-bowled glass to channel
\nthe aromatic nose and develop the bead.<\/p>\n

UNUSUAL PAIRING<\/strong>
\nWith a vegetable or fish tempura.
\nServed cold, it is perfect with a salad of exotic fruits.
\nAnd why not try it with a sorbet?
