PRODUCTION ZONE<\/strong>
\nThe vineyards are situated in San Rocco Seno d\u2019Elvio (Alba)
\nat a medium elevation and with varying exposures to the sun.
\nElevation: 270 metres above sea level<\/p>\n

VINES AND SOIL<\/strong>
\n2.5 hectares: vines of approximately 20 years of age on
\nLequio formations (grey marl alternating with sand layers)<\/p>\n

GRAPE VARIETY<\/strong>
\nWhite Moscato<\/p>\n

HARVEST<\/strong>
\nHand-picked over the first ten days of September<\/p>\n

VINIFICATION<\/strong>
\nWhite Moscato grapes are soft-pressed immediately following
\nthe harvest to extract the free-run must.
\nFermentation is carried out in pressure tanks at 15-16\u00b0 C until
\nalcohol by volume reaches 4-5% and approximately 2 bars of
\npressure. The wine is cooled to 0\u00b0 C to halt fermentation.
\nThe wine is then filtered and ready for bottling.<\/p>\n

PRESENTATION<\/strong>
\nAvailable format: 0.75 l
\nAlcohol content 4.5-5% by volume depending on the vintage
\nStraw-yellow colour with gold highlights, occasionally with a
\npale green tinge.
\nUnique nose with sage, lemon, linden, and acacia notes;
\nfruit sensations such as apricot and peach.
\nEnjoy its sweet yet tart disposition.<\/p>\n

WHEN<\/strong>
\nCrisp and young to maintain its bead and heady perfumes.
\nAnd if laid down for a few years?
\nIt develops the intriguing notes of a passito wine.<\/p>\n

HOW<\/strong>
\nStore in a dark, dry place at constant temperature, below 20\u00b0 C.
\nServe at 6\u00b0-8\u00b0 C, in a wide-mouthed champagne coupe to
\nconserve the showy flourish of its nose.<\/p>\n

CLASSIC<\/strong> PAIRING<\/strong>
\nA sweet wine calls for a sweet pairing.
\nFruit tarts, hazelnut tart with zabaglione, traditional
\ndove-shaped Easter cake or panettone?
\nThe choice is yours. You could sip it after a summer dinner or
\npour it over a fresh fruit salad.<\/p>\n

UNUSUAL PAIRING<\/strong>
\nAlways paired with desserts, try it also with or on top
\nof ice cream. Be intrepid and try it with oysters or spicy
